4 tomatoes

Instructions

1.Preheat oven to 180 degrees Celsius.
2.Dice the tomatoes and place them in a bowl. Add olive oil, red wine vinegar, white sugar, chopped parsley, chopped mint, chopped basil, fresh oregano, capers, garlic, salt, and black pepper.
3.In a baking dish, add 2 tablespoons of olive oil and spread it around. Add sliced onions, sliced potatoes, sliced eggplants, sliced zucchinis, and sliced green bell peppers.
4.Pour the tomato mixture over the vegetables and mix.
5.Cover the baking dish with foil and bake for 30 minutes.
6.After 30 minutes, remove the foil and add the okra. Mix well.
7.Bake uncovered for an additional 30 minutes.
8.Remove from the oven and allow to cool for 5 minutes. Serve hot or at room temperature.
