Ingredients

2 ounces dried wild mushrooms
2 ounces butter
1 large onion , finely chopped
1 stalk celery , finely chopped
1 lb mixed fresh mushrooms , peeled and sliced
4 ounces cracked farro ( see above )
6 cups chicken stock
1 large potato , peeled and cut into dice
fresh bouquet garni
fresh dill leaves , coarsely chopped
1/2 lemon , juice of , only
sour cream , to serve
Russian Wild Mushroom Soup With Farro is a classic dish from Eastern Europe, where mushroom picking is a popular pastime. This soup is hearty and filling, perfect for a cold winter night. Instructions

1.Start by soaking the dried wild mushrooms in enough hot water to cover them for 30 minutes.
2.Melt butter in a large pot over medium heat. Add onion and celery and cook for 5 minutes or until softened.
3.Add the fresh mushrooms and cook until they release their liquid (around 15 minutes).
4.Add the soaked wild mushrooms (reserving the soaking liquid), farro, chicken stock, potato, bouquet garni, and 2 cups of the reserved mushroom soaking liquid. Bring to a boil.
5.Reduce heat, cover and simmer for 30 minutes or until the farro is tender.
6.Remove the bouquet garni and add the fresh dill. Season with lemon juice, salt and freshly ground pepper to taste.
7.Serve hot with a dollop of sour cream on top.
