Ingredients

1 lb lean beef , cut into cubes
1 medium onion , chopped
1 teaspoon garlic , diced
1 bay leaf
2 -3 teaspoons beef bouillon ( more if needed )
4 -5 cups water
1 stalk celery , chopped ( i add some leaves )
1 can diced tomatoes
2 cans V8 vegetable juice
2 small zucchini , chunked
1 cup diced carrot
1 can green beans
1 cup sliced mushrooms
2 cups sliced cabbage ( can use coleslaw mix )
1 cup sliced okra ( optional )

Instructions

1.Sauté the onion and garlic in a large pot until soft.
2.Add beef, bay leaf, bouillon, and water and let it cook for 1 hour or till the beef is tender.
3.Remove the bay leaf, skim the soup and discard the fat.
4.Add the celery, tomatoes, V8 juice, zucchini, carrot, green beans, mushrooms, cabbage, and okra (optional).
5.Let it cook for another 30 minutes till the vegetables are tender.
6.Season as needed with salt and pepper, and serve hot.
