Instructions

1.Preheat the oven to 425°F.
2.In a food processor, pulse shallots, garlic, brown sugar, coriander seeds, black peppercorns, salt, until finely chopped (but not pureed).

4.Place the beef tenderloin in a roasting pan and roast for 45-55 minutes or until a meat thermometer inserted in the center of the beef reads 135°F for medium rare, 145°F for medium.
