8 large ripe tomatoes
4 large green bell peppers
1/4 cup butter
1 onion , diced
1 clove garlic , minced , or to taste
2 pounds ground beef chuck
2 tablespoons soy sauce
1 tablespoon seasoned salt
1 tablespoon ground black pepper
1/2 cup water
1/2 cup olive oil
Greek Stuffed Tomatoes and Peppers, also known as Yemista, are a classic Greek dish that is popular throughout the Mediterranean region. Instructions

1.Preheat oven to 375°F (190°C).
2.Cut off the tops of the tomatoes and peppers and set aside to use as lids later.
3.Scoop out and discard the seeds and membranes from inside the tomatoes and peppers.
4.In a large skillet over medium heat, melt the butter and add the diced onion and garlic. Cook until the onion is soft and translucent.
5.Add the ground beef chuck to the skillet, breaking it up with a wooden spoon as it cooks. Cook until the beef is browned all over.
6.Remove from the heat and stir in the soy sauce, seasoned salt, and ground black pepper.
7.Spoon the beef mixture into the tomatoes and peppers, filling them 2/3 to 3/4 of the way full.
8.Place the lids back on the tomatoes and peppers.
9.Using a baking dish large enough to hold all the stuffed vegetables, pour in the water and olive oil. Arrange the stuffed tomatoes and peppers in the dish.
10.Cover the dish tightly with foil.
11.Bake the stuffed vegetables for 45-60 minutes, until they are tender and the meat is cooked through.
12.Remove the foil and bake for an additional 10-15 minutes, until the tops are lightly browned and crispy. Serve hot.
