Ingredients

2 lbs chuck roast
3 cans Rotel tomatoes & chilies
10 -20 ounces chorizo sausages
30 corn tortillas
4 ounces lard
3 cans chipotle chiles in adobo
8 ounces monterey jack and cheddar cheese blend , finely grated
2 garlic cloves
3 -4 tablespoons chili powder
1 can enchilada sauce , your favorite
2 tablespoons flour
This dish is a classic Mexican favorite, featuring tender shredded beef and spicy chorizo wrapped in delicious corn tortillas and covered in a rich and flavorful enchilada sauce. Instructions

1.Preheat the oven to 375°F and grease a 9x13 inch baking dish.
2.In a large pot, place the chuck roast with enough water to cover.
3.Add in the garlic and chili powder and bring to a boil, then reduce the heat and simmer for 2-3 hours or until the beef is tender.
4.Remove the beef from the pot and shred with two forks.
5.In a separate skillet, cook the chorizo until browned and crumbly.
6.Add in the Rotel tomatoes and chilies and cook for 5 minutes on medium heat.
7.To make the sauce, heat up the lard in a saucepan over medium heat.
8.Add in the flour and whisk together until smooth, then cook for a minute.
9.Pour in the enchilada sauce and chipotle chiles in adobo, whisking until smooth.
10.To assemble the enchiladas, dip the tortillas in the sauce and fill with beef and chorizo mixture.
11.Roll up the tortillas and place seam side down in the prepared baking dish.
12.Pour the remaining sauce over the enchiladas and sprinkle with the grated cheese.
13.Bake in the oven for 20-25 minutes or until the cheese is melted and bubbly.
14.Serve hot with toppings like sour cream, guacamole, and chopped cilantro.
