Ingredients

1 pound bite-size whole wheat pasta , such as rigatoni or penne
1 tablespoon Salt
1 medium head cauliflower , trimmed and cut into bite-size florets
3 tablespoons olive oil
1/2 red bell pepper , cut into medium dice
1/2 yellow bell pepper , cut into medium dice
3 cloves garlic , minced
1 cup canned crushed tomatoes
1 teaspoon Italian seasoning
1/4 cup coarsely chopped pitted kalamata olives
4 cups factory-washed arugula or spinach
3/4 cup crumbled feta cheese , divided
1 pinch Freshly ground black pepper
Whole Wheat Rigatoni and Cauliflower, Wilted Arugula, Feta & Olives is a healthy and delicious vegetarian pasta dish. Instructions

1.Bring a large pot of water to a boil over high heat. Add 1 tablespoon of salt and the pasta and cook according to the package instructions until al dente.
2.Meanwhile, in a large skillet, heat 2 tablespoons of the olive oil over medium heat. Add the cauliflower and stir to coat in the oil. Season with salt and pepper. Cook, stirring occasionally, for 10 to 12 minutes, or until the cauliflower is browned and tender.
3.Add the remaining tablespoon of olive oil to the skillet. Add the red and yellow bell peppers and garlic and cook, stirring occasionally, until the peppers are tender, about 5 minutes.
4.Add the crushed tomatoes and Italian seasoning to the skillet. Cook for 3 minutes, or until the mixture is heated through.
5.Drain the pasta in a colander and transfer it back to the pot. Add the cauliflower mixture, olives and arugula. Toss to combine. Add half of the feta cheese and toss again. Season with salt and pepper, to taste. Divide among six plates and sprinkle the remaining feta cheese on top.
