Curried Beef over Bow Tie Pasta is a fusion of Italian and Indian cuisine. The bow tie pasta provides a familiar base for the warm and spicy sauce made with curry powder and cumin. The sauce is thick and creamy, thanks to the plain yogurt, and is chock full of veggies like cauliflower and snow peas. The steak adds a touch of richness and heartiness to the dish, making it perfect for cold winter nights. While this meal may seem complex and exotic, it is surprisingly easy to make and can be customized to suit your spice preferences.

Instructions

1.Cook the bow tie pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water before draining.
2.While the pasta cooks, heat a grill pan over medium-high heat and spray with non-stick spray. Sprinkle the cooked and thin sliced steak with 1/2 teaspoon curry powder, 1/2 teaspoon cumin, minced garlic, salt, and pepper. Grill the steak for 3-4 minutes per side until cooked through and golden brown. Let rest before thinly slicing into bite-sized pieces.
3.In a large skillet, heat the olive oil over medium heat. Add the cauliflower florets, snow peas, diced onion, and minced scallions. Cook for 3-4 minutes until the vegetables start to soften, stirring occasionally.
4.Add the chicken broth, pasta water (if needed), and plain yogurt to the skillet, stirring to combine. Sprinkle in 1 teaspoon curry powder, 1 teaspoon cumin, cilantro, and red pepper flakes. Bring to a simmer and cook for 5-6 minutes until the sauce has thickened slightly.
5.Add the cooked and sliced steak to the skillet and stir to coat in the curry sauce. Serve the curried beef over the bow tie pasta, garnished with additional cilantro if desired.
