Ingredients

5 cups water
1 teaspoon salt
2 1/2 cups bulgur
1 eggplant , sliced into 1/2 inch rounds
2 tablespoons butter
2 cloves garlic , minced
3 tablespoons all-purpose flour
3 cups milk
1/2 cup chopped fresh basil
1 pinch ground nutmeg
salt and pepper to taste
3 1/2 cups peeled roma ( plum ) tomatoes
1 egg , beaten

Instructions

1.Preheat oven to 350 degrees F.
2.In a large pot, bring water and salt to a boil. Stir in the bulgur.
3.Reduce heat to low, cover, and simmer for 15 minutes.
4.While bulgur is cooking, heat butter in a large skillet over medium heat.
5.Add sliced eggplant and garlic; sauté until eggplant is browned.
6.Sprinkle flour over eggplant and stir for 1 minute.

8.Stir in the chopped basil, nutmeg, salt, and pepper to taste.
9.In a separate pan, cook peeled tomatoes for 5 minutes.
10.Remove tomatoes from heat and let cool.
11.In a baking dish, layer cooked bulgur, eggplant mixture, and tomatoes (in that order) until all ingredients are used up.
12.Pour beaten egg over the top of the dish.
13.Place in preheated oven and bake for 25-30 minutes.
14.Let cool for 5 minutes before serving.
