1/2 lb lean ground beef
1/4 cup chopped onion
1 jar commercial pasta sauce
1 egg , beaten
3/4 cup ricotta cheese
2 tablespoons grated parmesan cheese
2 teaspoons dried oregano
1 teaspoon dried basil
1 1/4 cups shredded mozzarella cheese
4 cooked lasagna noodles
1 cup fresh baby spinach leaves , washed and stems removed

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, cook ground beef and onion until beef is no longer pink.
3.Drain any excess fat.
4.Add pasta sauce to skillet and bring to a boil; reduce heat and simmer for 5 minutes.
5.In a small bowl, combine egg, ricotta cheese, Parmesan cheese, oregano, and basil.
6.Spread 1/4 cup of the beef mixture in the bottom of a baking dish.
7.Spread 1/4 cup of the ricotta mixture on each lasagna noodle.
8.Add spinach leaves on top of ricotta mixture.
9.Roll each noodle up tightly and place seam-side down in the baking dish.
10.Pour remaining beef mixture over the rollups, and sprinkle with shredded mozzarella cheese.
11.Cover dish with foil and bake for 25 minutes.
12.Uncover and bake for an additional 25 minutes, or until heated through and cheese is melted and bubbly.
