Ingredients

1 cup sour cream
2 teaspoons prepared horseradish ( more if you like it spicy ! )
3 tablespoons Dijon mustard
6 teaspoons peppercorns ( black , white and green )
2 teaspoons coarse salt
3 tablespoons Dijon mustard
5/8 cup room temperature butter
1 cup loosely packed fresh parsley , chopped
1 beef tenderloin , trimmed

Instructions

1.Preheat oven to 425°F (220°C).
2.Mix together sour cream, 2 tablespoons Dijon mustard, and prepared horseradish in a small bowl. Set aside.

4.Rub beef tenderloin with pepper mixture, covering all sides.
5.Heat a large oven-safe pan on medium-high heat and add butter. Once melted add the beef tenderloin and sear for 3-4 minutes per side.
6.Once seared, transfer the pan to the oven and roast for 20-25 minutes or until desired doneness is achieved.
7.Let meat rest for 10-15 minutes before slicing and serving with the sour cream horseradish sauce on top. Garnish with fresh parsley.
