Ingredients

1/4 cup beef bouillon granules
10 cups hot water
3 lbs boneless chuck roast , trimmed
8 whole cloves
3 celery ribs , cut into thirds
2 large carrots , peeled , cut into thirds
1 large onion , quartered
1 seeded green bell pepper , quartered
1 bunch parsley sprig , plus
1/2 cup parsley , chopped
2 bay leaves
1/2 teaspoon freshly-ground pepper
1 package egg noodles
1 teaspoon salt
freshly-ground pepper , to taste
This Amish Oven Beef & Noodle Stew is a traditional dish that is simple and delicious. Instructions

1.Preheat the oven to 350°F.
2.In a roasting pan, combine the beef bouillon and hot water, stirring well to dissolve the bouillon granules fully.
3.Add the chuck roast, celery, carrots, onion, green bell pepper, parsley sprigs, bay leaves, and freshly-ground pepper to the roasting pan. Cover tightly with aluminum foil and bake for 3 hours.
4.Remove the roast from the oven and shred it into bite-size pieces using two forks. Discard any fat, bones, or gristle.
5.Remove the vegetables and bay leaves from the pan and discard.
6.Skim the fat from the broth. Add salt, freshly-ground black pepper and chopped parsley to the broth, and stir.
7.Bring the broth to a boil and add egg noodles. Cook until the egg noodles are tender, approximately 6 minutes.
8.Return the shredded beef to the pan, stirring well to combine.
9.Adjust seasoning and serve hot.
