Ingredients

1/2 teaspoon white salt ( can use up to 1 teaspoon salt ) or 1/2 teaspoon seasoning salt ( can use up to 1 teaspoon salt )
1/2 cup dry white wine
2 cups beef stock ( or use a good quality beef broth )

Instructions

1.Preheat the oven to 450°F (230°C).
2.Make small slits all over the roast, then stuff the garlic halves into the slits.
3.Season the roast generously with black pepper and salt.
4.Place the roast, fat side up, in a roasting pan and pour the white wine and beef stock around it.
5.Roast for 15 minutes, then reduce the temperature to 325°F (160°C) and continue cooking for another 1 1/2 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium-rare. Check the temperature with a meat thermometer to ensure accuracy.
6.Remove the roast from the oven, cover with foil, and let it rest for 10-15 minutes before slicing and serving.
