Ingredients

beef tenderloin , trimmed
coarse salt & freshly ground black pepper
2 tablespoons vegetable oil
2 medium sweet potatoes , peeled and sliced
1 medium banana , sliced
4 tablespoons butter , divided
1 teaspoon peeled and minced fresh ginger
1/2 cup orange juice
1/8 teaspoon cinnamon
1 cup barbecue sauce
1 cup mango chutney ( see note )
1 teaspoon chili sauce
2 tablespoons soy sauce

Instructions

1.Preheat the oven to 375°F (190°C).
2.Season the beef tenderloin generously with salt and pepper.
3.In a large skillet, heat the vegetable oil over medium-high heat until sizzling.
4.Add the beef and sear for 3-4 minutes on each side, until browned all over.
5.Transfer the skillet to the oven and roast for 10-15 minutes, until the beef is cooked to the desired level of doneness.
6.While the beef is cooking, prepare the sweet potato puree. In a medium-sized pot, add the sweet potato slices and enough water to just barely cover them. Cook until tender.
7.Drain the sweet potatoes and mash them with sliced banana, 2 tablespoons of butter, and the minced ginger. Add salt and pepper to taste.
8.In a saucepan, heat the orange juice, cinnamon, and remaining 2 tablespoons of butter over medium heat. Cook until the mixture is reduced by half. Add the barbecue sauce, mango chutney, chili sauce, and soy sauce. Simmer for a few minutes until thickened.
9.Serve the seared beef tenderloin slices with sweet potato puree and drizzle with mango barbeque sauce.
