Ingredients

3 lbs beef short ribs
1 tablespoon vegetable oil
2 chopped onions
3 minced garlic cloves
1 tablespoon grated gingerroot
1/2 teaspoon hot pepper flakes
4 carrots , peeled and sliced
4 turnips , peeled and sliced thinly
1 can diced tomatoes
1/4 cup beef broth or 1/4 cup water
1/3 cup soy sauce
2 tablespoons tomato paste
4 teaspoons fennel seeds
2 teaspoons whole cloves
2 teaspoons black peppercorns
1 cinnamon stick
1/4 cup all-purpose flour
3 tablespoons butter , soften
2 green onions , thinly sliced ( optional )
This Ginger and Tomato Beef Short Rib Stew is a tasty twist on your classic beef stew. The addition of ginger and tomato gives the dish a unique flavor and a bit of heat. Instructions

1.Preheat oven to 350°F.
2.In a large casserole, heat oil over medium-high heat and brown the ribs on all sides. Remove the ribs and keep to aside.
3.Add onions, garlic, ginger root and hot pepper flakes, stirring for about 3 minutes. Add carrots and turnips and stir for another 3 minutes.
4.Stir in canned tomatoes, beef broth or water, soy sauce and tomato paste. Stir in fennel seeds, whole cloves, black peppercorns and cinnamon stick.
5.Put the ribs back into the casserole, cover and place in the preheated oven and cook for 2 1/2 hours or until the ribs turn fork-tender.
6.In a small bowl, mix flour and butter to form a paste.
7.Remove the casserole from the oven and take out the ribs. Place the casserole over medium heat and stir in the flour paste to thicken the sauce.
8.Remove the bones from the ribs and cut the meat into small chunks. Add the meat back to the sauce and cook for another 10-15 minutes. Sprinkle the green onions over the top if desired.
