Ingredients

1 lb ground beef
3 cups cold water
1 cup ground texturized soy protein ( grind in food processor )
2 tablespoons defatted soy grits ( or soy flour )
2 tablespoons tomato paste
4 teaspoons dried onion flakes
1 tablespoon plain chili powder
1 tablespoon masa corn flour
1 tablespoon all-purpose flour
2 teaspoons salt
1 teaspoon Accent seasoning
1 teaspoon garlic powder
3/4 teaspoon Worcestershire sauce
1/2 teaspoon sugar
1/4 teaspoon ground cumin
1 dash ground black pepper
1 dash cayenne pepper
1 dash citric acid ( natural flavor enhancer )
1 stone-ground corn tortilla
pure canola oil
1 teaspoon taco sauce ( Jack in the Box Taco Sauce ( Copycat ) )
1/2 slice American cheese , divided diagonally
2 tablespoons shredded iceberg lettuce

Instructions

1.In a large saucepan, brown the ground beef until fully cooked.
2.Add 1 cup of cold water and bring the beef to a boil.
3.Add the texturized soy protein, soy grits, tomato paste, onion flakes, chili powder, masa corn flour, all-purpose flour, salt, Accent seasoning, garlic powder, Worcestershire sauce, sugar, cumin, black pepper, cayenne pepper, and citric acid.
4.Stir well to blend all ingredients and bring to a boil over medium heat.
5.Reduce heat to low and let simmer for 30 minutes, stirring occasionally to prevent sticking.
6.Preheat oven to 375°F (190°C).
7.Spread a thin layer of canola oil over the tortilla and place it on a baking sheet.
8.Bake the tortilla for about 5 minutes, or until light and crispy.
9.Remove from oven and spread a teaspoon of taco sauce over it.
10.Divide the beef mixture into two portions and place one portion over the tortilla.
11.Add half slice of cheese over the beef mixture and sprinkle the shredded lettuce on top.
12.Fold the tortilla in half over filling and serve hot.
