Ingredients

3 tablespoons extra-virgin olive oil
1/2 large red onion , diced
2 cloves garlic , minced
1/4 cup cubed pancetta
1 box frozen chopped spinach - thawed , drained and squeezed dry
3 tablespoons feta cheese
4 slices Provolone cheese
1 sheet frozen puff pastry , thawed
1 egg white

Instructions

1.Preheat the oven to 375°F (190°C).

11.Bake for 25-30 minutes, or until the pastry is puffed and golden brown.
12.Let the spinach pie cool for a few minutes before slicing and serving.
