Ingredients

2 tablespoons coffee , grounds
1/2 teaspoon ground chipotle chile pepper ( Mrs . Dash makes a ground chipotle spice blend )
1 teaspoon unsweetened cocoa powder
1/4 teaspoon cinnamon
1/2 tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon cumin
1 teaspoon sea salt
1/2 tablespoon coconut oil
2 1/2 lbs top round roast ( the recipe calls for chuck roast , but I prefer top round )
1 red onion , halved and sliced
3/4 cup water

Instructions

1.Heat a skillet to medium high and add coconut oil. Once oil is hot, place the roast beef in the skillet and sear for 3-4 minutes on each side.
2.While the meat is searing, mix together the coffee, chipotle chile pepper, unsweetened cocoa, cinnamon, garlic powder, oregano, cumin, and sea salt in a small bowl.
3.Once the meat is seared, place it in a slow cooker and cover it with the spice mixture. Add water to the slow cooker, then cover and cook on low for 6-7 hours, until the meat is tender.
4.Once the meat is done, remove it from the slow cooker and place it on a cutting board to rest for 10-15 minutes.
5.While the meat is resting, add the sliced onion to the liquid in the slow cooker and cook on high for 20-25 minutes, until the onions are soft and slightly caramelized.
6.Once the onions are done, slice the roast beef against the grain and serve with the onions and cooking liquid.
