3 1/2 - 4 1/2 lbs boneless eye of round roast
4 teaspoons kosher salt
2 teaspoons vegetable oil
1 tablespoon vegetable oil
2 teaspoons pepper

Instructions

1.Set the oven rack to the lower-middle position and heat the oven to 225°F.
2.Rub the roast with 4 teaspoons of kosher salt.
3.Heat 2 teaspoons of vegetable oil in a 12-inch skillet over medium heat until the oil is shimmering, then add the roast and brown all sides, about 8 minutes.
4.Brush the roast with remaining 1 tablespoon of vegetable oil and sprinkle it with 2 teaspoons of coarse ground pepper.
5.Set the roast on a wire rack set in a rimmed baking sheet and roast it in the oven until the meat is cooked to the desired temperature. (Medium-rare - 118°F to 125°F, about 2 1/2 to 3 1/2 hours, or until the internal temperature measured using an instant-read thermometer reaches 118°F to 125°F for medium-rare.)
6.Remove the roast from the oven and tent it loosely with aluminum foil.
7.Let it rest for 20 to 30 minutes, or until the meat's internal temperature reaches 130°F to 135°F.
