Ingredients

1 medium eggplant , sliced lengthwise thinly
200 g beef mince , cooked and drained
3/4 cup favourite pasta sauce , plus an extra
1/2 cup favourite pasta sauce
3/4 cup grated cheddar cheese

Instructions

1.Preheat oven to 190°C (375°F).
2.Spread half a cup of pasta sauce on the bottom of a 9 by 13-inch baking dish.
3.Spread 1 tablespoon of the remaining pasta sauce onto a slice of eggplant.(Repeat this process until all eggplant slices are coated with pasta sauce.)
4.Spoon a tablespoon of cooked ground beef in the middle of each eggplant slice.
5.Roll the eggplant slices closed and place them seam-side down in the baking dish.
6.Pour the remaining pasta sauce on top of the eggplants.
7.Sprinkle with cheddar cheese.
8.Cover with foil and bake for 35-40 minutes.
9.Uncover and return to oven and cook for a further 15-20 minutes, or until the cheese is melt and browned.
