Pastitsio is a classic Greek dish that is similar to lasagna, but with a few distinct differences. It typically consists of layers of pasta, a spiced meat filling, and a rich, creamy topping. Pastitsio III is a variation on this classic recipe that features elbow macaroni in place of the traditional pasta shape, as well as a few additional spices and flavors. This dish is perfect for feeding a crowd or for meal prep, as it can be assembled in advance and baked when ready to serve. It pairs well with a simple side salad or some steamed vegetables.

Instructions

.Cook the elbow macaroni according to the package instructions, then drain and rinse with cold water.
.In a large skillet, brown the ground beef over medium-high heat, then drain off any excess fat.
.Add the onions and garlic to the pan and cook until the onions are soft and translucent.
.Stir in the tomato sauce, chicken stock, red wine vinegar, chili powder, allspice, and cinnamon.
.Reduce the heat to low and let the mixture simmer for 20 minutes, stirring occasionally.
.Meanwhile, preheat the oven to 350°F.
.In a saucepan, melt the margarine over medium heat. Whisk in the flour and black pepper until smooth and bubbly.
.Gradually stir in the milk and cook until the mixture thickens, stirring constantly.
.Remove from the heat and stir in the egg and Parmesan cheese.
.In a large bowl, toss the cooked macaroni with the beaten egg and Parmesan cheese.
.Spread the macaroni mixture in the bottom of a 9 x 13-inch baking dish.
.Pour the meat mixture over the macaroni and spread it evenly.
.Pour the creamy topping over the meat mixture and spread it evenly.
.Bake for 30-35 minutes, or until the topping is golden brown and the filling is heated through.
