Ingredients

3/4 cup mayonnaise ( I use light )
1 tablespoon fresh lemon juice
1 teaspoon Tony Chachere 's Seasoning
1/4 teaspoon hot pepper sauce
1/2 lb andouille sausage , cut into 1/4 inch cubes ( We make our own ground andouille , so I use that )
3/4 cup pecans , roasted , chopped
1 teaspoon salt
1/4 teaspoon black pepper
1 1/2 lbs ground chuck or 1 1/2 lbs ground beef ( 20 % fat )
1 1/2 lbs onions , thinly sliced
2 tablespoons olive oil , plus more for brushing rack
3 garlic cloves , minced
1 tablespoon golden brown sugar
6 large hamburger buns , split
8 ounces crumbled blue cheese
12 pickled okra pods , halved lengthwise
3 cups watercress , tops ( I 've never used )
This burger consists of juicy beef blended with spicy andouille sausage and seasoned with pecans. Topped with blue cheese, pickled okra, watercress, and a spicy mayonnaise, and then served on a lightly toasted bun. The caramelized onions add a sweet and savory flavor to the burger, making it a perfect meal for a dinner party or simply for satisfying a craving. It's a great dish for barbecue season or to be cooked indoors on a skillet.

Instructions

1.In a medium bowl, whisk together mayonnaise, lemon juice, Tony Chachere 's Seasoning, and hot pepper sauce to make the spicy mayo.
2.In a large bowl, mix together the ground beef, andouille sausage, pecans, salt and black pepper. Shape into 6 patties.
3.In a large skillet, heat olive oil over medium-high heat. Add onions to the skillet and cook until caramelized, stirring occasionally.
4.Preheat grill or broiler. Brush with olive oil. Grill or broil the burgers until desired doneness, about 4 minutes per side for medium.
5.Serve burgers on the hamburger buns topped with spicy mayo, caramelized onions, blue cheese, pickled okra, and watercress.
