8 carrots , diagonally sliced ( about 1 1/2 pounds )
7 yukon gold potatoes , peeled and cut into eighths ( about 3 pounds )
2 large onions , cut into eighths
2 tablespoons cornstarch

Instructions

1.Preheat your oven to 325º F.
2.In a large bowl combine beer, chopped onion, minced garlic, thinly sliced lemon, soy sauce, and 2 tablespoons of vegetable oil. Stir well.
3.Place boneless chuck roast in a large roasting pan and pour the marinade over the beef. Sprinkle with fresh ground pepper. Cover and let marinate in the refrigerator for an hour or overnight.
4.Arrange the diagonally sliced carrots, peeled and cut into eighths Yukon gold potatoes, and cut into eighths onions around the beef. Drizzle with remaining tablespoon vegetable oil.
5.Cover the roasting pan with aluminum foil and bake for 2.5 to 3 hours or until the beef is tender.
6.Transfer the beef and vegetables to a serving dish and let rest for 10 minutes. In the meantime, strain the cooking juices into a saucepan. In a small bowl, whisk together cornstarch with a little cold water until smooth. Add it to the cooking juices and bring to a boil, stirring constantly, until the sauce thickens.
7.Slice the beef and serve it with vegetables and sauce.
