3 cups red wine , burgundy is best
1 bay leaf
2 garlic cloves
1 teaspoon salt ( for seasoning flour )
1/2 teaspoon black pepper , freshly ground ( for seasoning flour )

Instructions

1.Preheat your oven to 350 degrees Fahrenheit.
2.In your Dutch oven over medium heat, fry the diced bacon until crispy. Remove the bacon from the pan and set aside on paper towels.
3.In batches, brown the dredged beef in the bacon fat until all sides are browned. Remove the beef from the Dutch oven and set aside.
4.In the same Dutch oven over medium heat, cook the onions, carrots, and celery until the onions are translucent and softened.

6.Add back the beef and bacon along with the diced potatoes, tomato ketchup, red wine, bay leaf, salt, and pepper.
