Ingredients

5 lbs boneless beef chuck roast , trimmed and cut into 4 pieces
4 slices bacon , chopped fine
1 onion , chopped fine
2 tablespoons chili powder
1 tablespoon paprika
1 1/2 cups brewed coffee
1 1/2 cups ketchup
1/4 cup packed dark brown sugar
2 tablespoons brown mustard
1 tablespoon hot sauce ( or to taste )
1 tablespoon cider vinegar
1 teaspoon liquid smoke
salt & pepper
10 sandwich buns , split

5.Place the beef in a slow cooker and top with the sauce. Cover and cook until the meat is tender, 9 to 10 hours on Low or 6 to 7 hours on High.
6.Transfer the beef to a large bowl and shred with 2 forks. Stir in the reserved bacon and enough sauce to coat.
7.Serve the beef on buns with the remaining sauce.
