Ingredients

6 pounds chuck roast , cut into large chunks
1/2 cup olive oil
1 teaspoon white sugar
6 pounds small white onions , cleaned and scored
1 can tomato paste
1/2 cup red wine
1/2 cup red wine vinegar
6 cloves garlic
1 teaspoon whole pickling spices
1 bay leaf
1 cinnamon stick
1/2 teaspoon dried rosemary
salt and pepper to taste
Dorothy's Stefado is a traditional Greek stew that is usually served during the winter months. Instructions

1.Preheat oven to 325°F (163°C).
2.In a Dutch oven, heat olive oil over medium heat. Brown the chunks of chuck roast to seal in the flavors.
3.Add the tomato paste, white sugar, red wine, red wine vinegar, garlic, pickling spices, bay leaf, cinnamon stick, dried rosemary, salt, and pepper. Stir until the meat is coated.
4.Add the scored onions, stirring to coat them well with the meat and sauce. Place the Dutch oven in the oven.
5.Cook for around 3.5 hours or until the meat is tender. Remove the bay leaf and cinnamon stick before serving.
