Instructions

1.Preheat oven to 425 degrees F (220 degrees C).
2.Combine the thyme, salt, pepper, and allspice in a small bowl; rub mixture evenly over the beef.
3.Place the beef in a roasting pan coated with cooking spray. Bake at 425 degrees F (220 degrees C) for 25 minutes or until a thermometer inserted in the thickest part of the roast registers 135 degrees F (57 degrees C) or until desired degree of doneness is reached.
4.Remove from oven and let stand for 10 minutes before slicing.
5.While the beef is resting, heat the brandy in a small saucepan over medium heat until it begins to boil. Add the minced shallot and cook for 1 minute, stirring constantly. Stir in beef broth and bring mixture to a boil. Reduce heat, and simmer until reduced to 1 cup (about 15 minutes).
6.Serve the beef with au jus.
