Instructions

1.Preheat grill or grill pan to medium-high heat.
2.Combine sour cream, Dijon mustard, tarragon, and horseradish in a small bowl, set aside.
3.Rub beef tenderloin evenly with black pepper. Coat grill rack or grill pan with cooking spray.
4.Place beef tenderloin on prepared grill rack or grill pan; grill 6 minutes on each side or until desired degree of doneness.
5.Place beef on a cutting board; brush with lemon juice. Let stand 5 minutes; thinly slice.
6.Arrange watercress evenly over 8 bread slices; top evenly with beef, capers, and cheese. Spread remaining 8 bread slices evenly with mustard mixture, and place on top of sandwiches.
7.Cut sandwiches in half diagonally.
