Ingredients

2 lbs beef chuck , cut into 3-inch pieces
2 cups red wine
1/4 cup red wine vinegar
2 carrots , roughly chopped
2 onions , sliced
2 tablespoons olive oil
4 slices bacon , cut into lardons
4 stems fresh rosemary
4 sprigs fresh thyme
3 garlic cloves , smashed
2 bay leaves
kosher salt & freshly ground black pepper

Instructions

1.Preheat oven to 325°F.
2.In a large Dutch oven, heat olive oil over medium-high heat until hot.
3.Brown the beef in small batches on all sides, seasoning each batch with salt and pepper.
4.Remove beef and set aside. Remove all but 2 tablespoons of fat from the pot.
5.Add onions, and cook for about 5 to 7 minutes, stirring occasionally until browned.
6.Add carrots, garlic, and bacon, and cook for another 5 to 7 minutes, stirring occasionally until bacon is crisp and vegetables are tender.
7.Return the beef to the Dutch oven.
8.Add wine, red wine vinegar, rosemary, thyme, bay leaves, and enough water to cover the beef.
9.Bring the mixture to a simmer and cover. Cook in the oven for approximately 2 to 2 1/2 hours or until meat is tender. Season to taste with salt and pepper.
10.Remove bay leaves before serving.
