Ingredients

1 1/2 cups water
5 teaspoons granulated yeast
1 teaspoon sugar
250 g butter
1 liter warm milk
2 kg flour
1 teaspoon salt
1 teaspoon sugar
1 1/2 kg sliced ham
1/2 kg smoked bacon
250 g butter

1/2 kg raisins
1 egg ( to `` varnish '' )

Instructions

1.For the dough: In a bowl, mix the water, yeast and sugar. Let stand for 10 minutes.
2.In another bowl, melt the butter and mix with the warm milk.
3.In a large mixing bowl, sift the flour and mix with salt and sugar. Add the previously mixed yeast and milk mixture. Knead until dough is smooth and elastic.
4.Let the dough rest for 2 hours or until it doubles in size.
5.For the filling: Fry the bacon until crisp. Remove from the pan and let cool down. Slice the ham and olives.
6.Preheat the oven to 160°C.
7.Divide the dough in 3 portions. Roll out each portion into a thin rectangle using a rolling pin.
8.Spread 1/3 of the sliced ham, bacon, olives, raisins and butter on each rectangle. Roll up dough tightly, folding in the sides as you go, to form a log.
9.Place each of the logs on a baking sheet and let sit for another hour.
10.Brush the surface of each of the logs with egg to varnish. Place into the oven and bake for 30 - 35 minutes or until golden brown.
