Ingredients

4 whole chicken breasts ( or 1 whole Chicken )
4 corn on the cob , cut in 6 slices
2 teaspoons salt
4 green onions
3 leeks
2 onions
2 green peppers
3 garlic cloves
1 bunch cilantro
2 lbs potatoes , cubed
2 cans kernel corn
1/2 cup heavy cream
5 tablespoons Cheez Whiz
1/2 lb white cheese , cubed ( like Mexican Queso Fresco )

Instructions

1.In a large pot, place the chicken breasts and corn, then add enough water to cover them. Add 1 teaspoon of salt and allow to boil for 20 minutes.
2.Remove the chicken and corn from the pot and set aside. Reserve the broth in a separate bowl.
3.In a large pot, sauté the green onions, leeks, onions, green peppers, and garlic in oil for 5 minutes.
4.Add the reserved broth and bunch of cilantro, then cover and simmer for 15 minutes.
5.In a separate pot, boil the cubed potatoes in salt water for 10 minutes.
6.Add the boiled corn kernels, heavy cream, and Cheez Whiz to the large pot containing the broth and vegetables.
7.Add the chicken breasts and simmer for another 5 minutes or until the chicken is fully cooked.
8.Discard the cilantro and serve with the boiled corn on the cob, cubed white cheese, and boiled potatoes.
