Ingredients

1/2 cup sugar
6 -7 eggs
1 can condensed milk
1 can evaporated milk
12 ounces low-fat milk
1 teaspoon vanilla

Instructions

1.Preheat oven to 350°F.
2.In a saucepan, caramelize sugar until golden brown. Pour into a 9-inch cake pan and swirl to cover the bottom. Allow the caramel to harden.
3.In a blender combine remaining ingredients and blend until smooth.
4.Pour mixture into cake pan over the caramel.
5.Place into a larger baking dish with water about halfway up the sides.
6.Bake for approximately 1 hour or until the center is set.
7.Allow it to cool down, then refrigerate for 2 hours or overnight.
8.Run a knife around the edges of the pan and invert onto a platter to serve.
