Instructions

1.Preheat oven to 375°F.
2.Rinse quinoa and put it in a medium saucepan with the chicken broth and lima beans. Bring to a boil, reduce heat to low, cover, and cook about 18 minutes, or until done.
3.Meanwhile, cut off the top of each of the zucchinis. Use a melon baller or rounded teaspoon to remove the interior, taking care not to break through the bottom. Brush with garlic oil and sprinkle with salt.
4.Combine the cooked quinoa and lima beans with the salsa, cheese, and cilantro. Stuff each of the zucchinis with half of the quinoa mixture, pressing down firmly.
5.Place the stuffed zucchinis in a baking dish and bake for about 30 minutes, until tender.
6.Serve hot, topped with toasted seeds.
