Ingredients

12 garlic cloves
1 tablespoon cumin
1/4 cup mild chili pepper , paste ( aji panca , if available )
1/2 cup vinegar , divided
1 tablespoon salt ( or to your taste )
2 teaspoons fresh ground black pepper
4 chicken breast halves ( boneless , skinless )
1 red bell pepper
1 large red onion
15 large mushrooms ( whole )
1/2 cup vegetable oil
wooden skewer , soaked in water for 1 hour

Instructions

1.Mince garlic cloves and mix with cumin, chili pepper paste, ¼ cup of vinegar, salt, and black pepper in a large mixing bowl.
2.Cut chicken breasts, red bell pepper, and large red onion into 1 inch cubes and add to the mixing bowl, tossing until chicken and vegetables are coated.
3.Cut the whole mushrooms in half and add them to the bowl as well, stirring until coated.
4.Thread chicken, red bell pepper, red onion, and mushrooms alternately onto a soaked wooden skewer.
5.In a small bowl mix vegetable oil and remaining ¼ cup of vinegar.
6.Brush oil and vinegar mixture onto skewers and grill for 12-15 minutes on high heat, making sure to flip the skewers every 3-4 minutes until chicken is cooked to an internal temperature of 165°F.
