1/4 cup canola oil
4 garlic cloves , mashed to a paste
1 medium red onion , halved and cut into 1/2-inch slices
2 large plum tomatoes , cored , seeded , and coarsely chopped
1 teaspoon dried oregano , lightly toasted in a dry , hot pan

Instructions

5.Add the marinated fish fillets, along with any excess marinade, and cook for 5-8 minutes, until the fish is cooked through and the sauce has thickened.
6.Serve the fish stewed in tomatoes and chilies hot, with lime halves on the side for squeezing over the top.
