2 cups quinoa ( about 10 oz )
4 scallions , chopped
1/2 cup chopped of fresh mint

Instructions

1.Preheat the oven to 450 °F.
2.Take a baking sheet and place the corn on it, then roast in the oven until cooked and lightly charred. This usually takes about 20 minutes. Once done, set aside to cool.
