Potato Causa Filled With Avocado and Shrimp is a traditional Peruvian dish that combines the texture of mashed potatoes with the creamy goodness of avocados and the umami flavor of shrimp. The dish is relatively easy to prepare and is perfect as a light appetizer before a meal. The potatoes are mashed with aji chili and lime juice to give them a zesty flavor, while the shrimp filling provides a contrast of creamy and savory taste. The dish is usually topped with diced white cheese and served chilled to accentuate the flavors.

Instructions

1.Boil the potatoes in salted water until they are soft and can be easily mashed.
2.Drain the water and mash the potatoes while they are still hot. Add in the lime juice, vegetable oil, yellow aji chili, salt, and pepper. Mix well.
3.In a separate mixing bowl, prepare the filling by mashing the avocados with the lemon juice and a pinch of salt. Add in the cooked shrimp and cocktail sauce, mixing everything together.
4.To assemble the dish, take a small scoop of the potato mixture and flatten it in your palm. Place a spoonful of the avocado and shrimp filling in the center and fold the sides of the potato mixture over the filling, creating a small cake.
5.Repeat the process with the rest of the potato mixture and filling.
6.Once all of the potato cakes are ready, top each one with a sprinkle of diced white cheese and a leaf of lettuce. Serve chilled.
