Ingredients

2 lbs skirt steaks
1 cup fresh lime juice ( about 8 limes )
3 tablespoons cumin seeds ( or 1 1/2 tablespoons ground cumin )
2 1/2 tablespoons minced garlic
1/3 cup roughly chopped fresh cilantro
kosher salt and freshly cracked black pepper
1/2 cup finely chopped pitted green olives
1 teaspoon chopped dried red chili pepper , of your choice to taste
1/4 cup olive oil
2 tablespoons freshly cracked black pepper
Lime-Soaked, Cumin-Crusted Skirt Steak is a flavorful take on a classic cut of beef. Skirt steak is a thin, long cut of beef that is known for its flavor. Instructions

1.In a small skillet, toast the cumin seeds over low heat until fragrant, about 3 minutes. Cool and coarsely grind in a spice grinder, smashing with the back of a spoon against the grinder if necessary.
2.In a large bowl, whisk the garlic, cilantro, and lime juice together until blended. Season with salt and black pepper. Add the steaks and turn to coat evenly. Cover and refrigerate for at least 2 hours or overnight.
3.Remove the steaks from the marinade; discard the marinade. Mix the cumin, black pepper, olives, and chili pepper together in a bowl. Rub the spice mixture all over the steaks and let stand at room temperature for 30 minutes.
4.Prepare a charcoal or gas grill. Oil the grill grates with cooking spray. Grill the steaks, turning once, until cooked to desired doneness, 6–8 minutes for medium rare. Let stand for 5 minutes before slicing thinly across the grain.
