2 medium carrots , shredded
2 green onions , thinly sliced
1/2 cup aged goat cheese , grated
1/4 cup sun-dried tomato , thinly sliced
3 eggs , beaten
salt and black pepper
2 tablespoons butter or 2 tablespoons grapeseed oil

Instructions

1.In a large bowl, combine Simply Potatoes & reg; Shredded Hash Browns, shredded carrots, sliced green onions, grated aged goat cheese, and sun-dried tomatoes. Mix well.
2.Add eggs, salt, and black pepper to the mixture. Stir until well combined.
3.In a large skillet, heat 2 tbsp of grapeseed oil or butter over medium heat.
4.Pour the mixture into the skillet and spread evenly. Cook on medium heat for about 8-10 minutes or until golden brown on the bottom. To flip the tortilla, invert it onto a large plate and slide it back into the skillet. Cook for another 8-10 minutes until golden brown on the other side.
5.Remove from heat and slide the tortilla onto a large plate. Slice into wedges and serve hot or at room temperature.
