2 bottles clam juice
1 can reduced-sodium fat-free chicken broth
1 cup light coconut milk
1/4 teaspoon ground red pepper

Instructions

1.In a large bowl, mix together the lime juice, salt, black pepper, and minced garlic. Add the fish and shrimp to this mixture, and toss well to coat them.
2.In a large saucepan, heat the olive oil over medium-high heat, and sauté the onions, green bell pepper, red bell pepper, green onion, and minced garlic, along with the bay leaf until the vegetables are soft.
3.Add in the chopped tomatoes, 1/4 cup of cilantro, clam juice, and chicken broth, and bring to a simmer for 5 minutes. Next, add in the coated fish and shrimp, and pour in the coconut milk.
4.Sprinkle in the ground red pepper and remaining 1/4 cup of cilantro. Stir well, cover, and let it simmer until the fish and shrimp are cooked through, which should be around 10 to 20 minutes, depending on the thickness of the fillets and size of shrimp.
