2 egg yolks
1/2 pint half-and-half

3 tablespoons parmesan cheese
13 ounces chopped tomatoes
3 tablespoons sunflower oil
2 hot red chili peppers , seeded & chopped
2 garlic cloves , mashed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1 pinch cayenne pepper
1 pinch paprika
1 tablespoon tomato puree
3 tablespoons chopped parsley
4 spring onions , chopped
1/2 teaspoon sugar
salt & pepper

Instructions

1.For the Herb Pastry
2.In a large bowl, mix together the flour, salt, cayenne pepper, butter, and shortening until it resembles breadcrumbs.
3.Add in the chopped oregano and parsley.
4.Gradually add water until the dough comes together and knead until smooth.
5.Wrap in plastic wrap and chill for 30 minutes.
6.Roll dough out and use to line 4 inch tart tins. Prick bases with a fork and chill for 30 minutes.
7.Preheat oven to 375°F.
8.Line each tart with parchment paper weighed down by baking beads or beans.
9.Bake for 15 minutes until the pastry is set. Remove the beans and paper and return to the oven for a further 5 minutes.
10.For the Hearts of Palm and Tomato Sauce
11.Heat butter in a large frying pan.
12.Add the hearts of palm and cook until golden brown.
13.In a pitcher, whisk together eggs, yolks, half-and-half, parsley, oregano, salt, and pepper.
14.Pour over hearts of palm and cook until the eggs are set.
15.For the Spicy Tomato Sauce
16.Heat oil in a large pot.
17.Add chili peppers and garlic. Stir until fragrant.
18.Add tomatoes, cinnamon, coriander, cayenne pepper, paprika, tomato puree, spring onions, sugar, salt, and pepper.
19.Bring the sauce to a simmer, then reduce heat and allow to thicken slightly.
20.Remove from the heat and stir in chopped parsley.
21.Ladle tomato sauce into each tart and serve with hearts of palm filling.
