Ingredients

For falafel:
1 can chickpeas
1/2 onion
1/4 cup fresh parsley
1/4 cup fresh cilantro
2 garlic cloves
1 tsp cumin
1 tsp coriander
Salt and pepper to taste
1/4 cup flour
1 tsp baking powder
Oil for frying
For wrap:
1 large tortilla
1/4 cup hummus
1/4 cup tzatziki sauce
1/2 cup chopped cherry tomatoes
1/2 cup chopped cucumber
1/2 cup shredded lettuce
Falafel is a popular Middle Eastern dish made from ground chickpeas and spices. It is often served in pita bread with fresh veggies and sauces. This wrap puts a spin on the traditional dish by using a tortilla instead and adding hummus and tzatziki sauce.

Instructions

1.For falafel:
2.Drain and rinse chickpeas.
3.In a food processor, pulse together chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, salt, and pepper until mixture is smooth.
4.Add flour and baking powder and blend for a few more seconds.
5.Form mixture into small balls and flatten slightly.
6.Heat oil in a skillet over medium heat. Fry falafel for 2-3 minutes on each side or until golden brown.
7.Drain on a paper towel.
8.For wrap:
9.Warm tortilla according to package instructions.
10.Spread hummus and tzatziki sauce onto tortilla.
11.Layer tomatoes, cucumber, lettuce, and falafel on top.
12.Roll up tortilla, tucking in the ends as you go.
13.Serve immediately.
