4 tablespoons butter , melted
1 tablespoon fresh lime juice
1 tablespoon grated lime , skin
4 eggs
1 can sweetened condensed milk
cinnamon
2 cups fine cornmeal
1 cup parmesan cheese , grated
1 cup all-purpose flour
1 cup sugar
2 tablespoons scant baking powder
1 cup guava paste , cut in small cubes ( optional )
Bolo De São Pedro is a popular cake from the Brazilian cuisine. It is named after Saint Peter – one of the twelve apostles of Jesus Christ, who is celebrated in Brazil as the patron saint of fishermen and farmers. This cake is mainly served during festivals and religious events, especially in the coastal regions of Brazil. The cake has a soft and fluffy texture due to the use of a fine cornmeal batter. The grated lime and cinnamon add the refreshing and unique aroma to it. The cake is generally topped with powdered sugar and sliced almonds before serving.

Instructions

1.In a bowl, beat the melted butter with the lime juice and grated lime skin, add 4 eggs and mix well.
2.Add sweetened condensed milk and cinnamon.
3.In another bowl, mix fine cornmeal, parmesan cheese, all-purpose flour, sugar, and baking powder. Gradually add this mixture to the wet ingredients and mix until well combined.
4.Optional step: Add cubed guava paste to the batter.
5.Preheat the oven to 180°C. Pour the batter in a cake pan and bake for approximately 40-45 minutes.
