Ingredients

8 cups dried black beans
3 lbs carne seca ( Brazilian salted cured beef )
2 lbs sweet sausage ( I use Portuguese chori�o when available )
2 lbs baby back ribs
2 bay leaves
1 large onion
2 cloves garlic
3 tablespoons olive oil

Instructions

1.Rinse the black beans in cold water and soak them overnight in a large pot.
2.Drain the beans and add fresh water, covering them by about 2 inches. Bring to a boil and then let simmer for 2 hours.
3.In a separate pot, add the carne seca and enough water to cover it. Bring to a boil and then let simmer for 30 minutes. Pour out the water and repeat this process for 3 more times.
4.Cut the carne seca, sweet sausage, and baby back ribs into bite-sized pieces.
5.In a large pan, saute the onion and garlic in olive oil until they are soft and translucent.
6.Add the meats, bay leaves, and enough water to cover everything. Bring to a boil and then let simmer for 1 hour.
7.Combine the meat and bean mixtures and let it all simmer for another hour. Add salt to taste.
8.Serve hot with white rice, collard greens, and farofa.
