2 chiles de arbol , crushed
1/2 large carrot , peeled and grated
1/2 yellow onion , thinly sliced
1/4 head green cabbage , shredded
kosher salt , to taste
2 cups masa harina
16 ounces grated monterey jack cheese

At their core, they are like two tortillas sandwiched together to form a thick, hearty cake. Instructions

1.To make the Curtido (spicy slaw), combine vinegar, sugar, oregano and salt in a large bowl and whisk to combine.
2.Add shredded cabbage, sliced onions and grated carrot to the bowl and mix well. Cover and refrigerate until ready to serve.
3.To make the Pupusas, start by combining Masa Harina and salt in a mixing bowl. Add warm water and mix until it forms a smooth dough.
4.Divide the dough into 8-10 equal portions and roll into balls.
5.Using your thumb, make an indentation in each ball to create a pocket. Stuff the pocket with a spoonful of grated cheese and seal the edges.
6.Flatten each ball and shape it into a disc.
7.Heat an ungreased skillet over medium heat and cook the pupusas for 2-3 minutes per side, until they are golden brown.
8.Serve hot with curtido.
