Ingredients

fish , trimmings ( from your 4 lbs of fish fillets , heads , tails , skin , bones , etc )

2 quarts water
1 teaspoon sugar

Instructions

1.In a large pot, combine the fish trimmings, quartered onions, sliced carrots, sliced celery, parsley, peppercorns, unpeeled garlic clove, and 2 quarts of water. Bring to a boil and then reduce heat and simmer for 2 hours, uncovered.
2.Remove from heat and strain the broth through a sieve into a bowl.
3.Return the broth to the pot and add 1 teaspoon of sugar, sliced carrots, salt, pepper, onion, and garlic. Bring to a boil and then reduce heat and simmer for 30 minutes.
4.Meanwhile, in a bowl, combine the fish fillets, eggs, matzo meal, ice water, salt, and pepper. Mix well until it forms a smooth and sticky mixture.
5.Using wet hands, shape the fish mixture into balls and drop them gently into the simmering broth. Cover the pot and simmer for 45 minutes.
6.Remove from heat and let cool in the broth. Then transfer the gefilte fish and broth to a container and chill overnight before serving.
