3 slices white bread ( crust removed )
1 cup carrot ( shredded )
1 celery rib ( minced )
1/2 cup onion ( minced )
2 garlic cloves ( minced )

2 teaspoons dry mustard
8 ounces ground round
8 ounces ground pork
8 ounces ground veal
2 eggs ( beaten )
2 teaspoons salt
1 teaspoon ground pepper
1 teaspoon Tabasco sauce
1/2 teaspoon rosemary ( chopped )
3 tablespoons ketchup
2 1/2 teaspoons dry mustard
2 tablespoons dark brown sugar
1 tablespoon olive oil
1/2 cup red onion ( cut in rings )
3 tablespoons water
1 tablespoon rosemary ( garnish )

Instructions

1.Preheat oven to 400°F.
2.In a bowl, soak bread in 1/3 cup of water.
3.In skillet, add carrots, celery, onion, and garlic, and cook until vegetables are tender and almost all the water has evaporated, stirring occasionally.
4.In a large bowl, combine ketchup, 2 teaspoons dry mustard, ground round, ground pork, ground veal, eggs, salt, black pepper, Tabasco sauce, and rosemary. Mix thoroughly.
5.Squeeze the excess water from the bread, and then add to the meat mixture. Mix well and transfer to a roasting pan.
6.In a separate bowl, combine the remaining ketchup, dry mustard, dark brown sugar, and olive oil. Spread evenly over the mixture.
7.Place the meatloaf in the oven, and cook for 45-50 minutes or until cooked through.
8.In the skillet, sauté the onions and rosemary while the meatloaf is cooking. Add water and cook until water has evaporated, approximately 3 minutes.
9.Once meatloaf is ready, remove from pan and add sautéed onions and rosemary on top. Serve and enjoy!
