1/2 cup cilantro
2 hard-boiled eggs , peeled and quartered
1 medium red bell pepper , seeded , membranes removes , cut in thin strips
1/2 cup green pimento stuffed olive , cut in half across
4 whole green onions
1 cup of your favorite salsa

Instructions

4.Add chicken to the pot, cover and cook until done, approximately 10-15 minutes.
5.Remove chicken and let cool before dicing and adding to the serving bowl.
6.Stir in cilantro, eggs, red bell pepper, green olives, green onions, and salsa.
7.Serve cold.
