Instructions

1.Preheat the oven to 400°F (205°C).
2.In a small bowl, mix the chipotle chile, black peppercorns, allspice, red chili powder, cumin seeds, coriander seeds, paprika, sugar, and salt together until well combined.

4.Heat an oven-safe skillet over high heat. Add the bison tenderloin fillets and sear for 2-3 minutes on each side, until browned.
