Ingredients

3/4 lb unsalted butter
1 1/4 cups granulated sugar
1/4 teaspoon pure vanilla extract

Instructions

1.Cream together the butter, sugar, vanilla, and salt until light and fluffy.

4.Gradually add the dry ingredients to the wet ingredients until a dough forms, then mix in the hazelnut flour.
5.Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
6.Preheat your oven to 350°F (180°C).
7.Roll out the cookie dough on a lightly floured surface to a thickness of 1/8 inch (3 mm).
8.Cut out the cookies with a 2-inch (5 cm) round cookie cutter, then use a smaller cookie cutter to cut a hole in the center of half of the cookies.
9.Bake the cookies on a lined baking sheet for 10-12 minutes, or until lightly golden brown.
10.Allow the cookies to cool completely, then spread raspberry jam onto the flat side of each solid cookie and sandwich them with a cut-out cookie on top.
11.Sprinkle the sandwiched cookies with confectioners' sugar and enjoy!
